Delicious soft fruits are in abundance, the grass is growing at a rate of knots and the season is in full swing.  Chelsea Flower Show was a sea of colour bathed in glorious sunshine, which will hopefully stay for Derby Day and Royal Ascot.  Champagne corks will be popping!


Anna's Recipe

I have chosen two drinks for this months recipe section.  One a fresh cordial which can be made up and will keep for a few months and the other a delicious cocktail using delicious berries.


Raspberry Cordial

500g Raspberries

500g Caster Sugar

3 tbsp Wine vinegar


Put the raspberries in a pan with the sugar and vinegar. Mash over a low heat for 10 mins until smooth and syrupy.  Rub through a sieve into a clean pan.

Tip the seeds from the sieve into a bowl and stir in 300 ml water, then sieve again to remove the last of the pulp from seeds.  Pour the liquid into the pan with the sieved pulp, stir well and boil for 1 min.  Pour into small sterilised bottles and seal.  The cordial will keep unopened for a few months.  Once opened, store in the fridge.

Berry Daiquiri

175g ripe strawberries or 200/8oz raspberries (or a mix of 100g strawberries and 100g/4 oz of raspberries)

About 6 ice cubes

Juice of half a lime

100 ml White rum

Small lime sliced to serve


If using raspberries, blend these first to a puree then rub through a sieve to extract the pips.  Put a handful of ice cubes in a powerful blender and crush.  Add the berries or pulp, plus the lime and lemon juice and rum.  Whiz again and pour into chilled cocktail glass straight away.  Decorate with lime slice.

Elizabeth's Top Tips!

Hull strawberries the easy way.  First fluff up the leaves so they're not flat then gently but firm;y insert a drinking straw into the bottom of the fruit and push up to remove the hull (centre part) and leaves.


If you have any kind of blood that attracts mosquitos like a moth to a flame, then listen up.  To keep the pesky blood suckers at bay, place a fabric softener dryer sheet in your pocket.  Mosquitos are repelled by the scent and you'll smell like summer breeze at night!
