Caponata Pasta

Whip up this easy vegetarian caponata pasta in just 20 minutes! It's simple to make, budget-friendly, packs three of your five-a-day into one delicious meal and will serve a family of four!

Ingredients:

  • Olive oil

  • Large onion

  • Chargrilled Mediterranean veg

  • 400g Chopped tomatoes

  • Small capers

  • Raisins

  • Rigatoni, penne, or another short pasta shape

  • Basil leaves

  • Parmesan (you can get vegetarian parmesan from most supermarkets)

Method:

  • STEP 1
    Heat the oil in a large pan and cook the onion for 8-10 mins until starting to caramelise (or for longer if you have time – the sweeter the better). Add the garlic for the final 2 mins of cooking time.

  • STEP 2
    Tip in the mixed veg, tomatoes, capers and raisins. Season well and simmer, uncovered, for 10 mins, or until you have a rich sauce.

  • STEP 3
    Meanwhile, boil the kettle. Pour the kettleful of water into a large pan with a little salt and bring back to the boil. Add the pasta and cook until tender with a little bite, then drain, reserving some of the pasta water. Tip the pasta into the sauce, adding a splash of pasta water if it needs loosening. Scatter with the basil leaves and parmesan, if you like, and serve straight from the pan

Vegetarian Fajitas

For a quick, easy veggie family meal, try these black bean, avocado and pepper fajitas. With preparation taking only 5 minutes, and cooking only 10 minutes, this quick and delicious meal is guaranteed to impress your whole family.

If you don't have the spices, swap them out for fajita seasoning.

Ingredients:

  • 400g Canned black beans, drained

  • 4 large or 8 small flour tortillas

  • Coriander, finely chopped

  • 1 sliced avocado

  • 2 tbsp sour cream or creme fraiche 

For the fajita mix:

  • 1 red and 1 yellow pepper, cut into strips

  • 1 tbsp oil

  • 1 red onion, cut into thin wedges

  • 1 garlic clove, crushed

  • ½ tsp chilli powder

  • ½ tsp smoked paprika

  • ½ tsp ground cumin

  • 1 lime, juiced

Method:

  • STEP 1
    To make the fajita mix, take two or three strips from each colour of pepper and finely chop them. Set aside. Heat the oil in a frying pan and fry the remaining pepper strips and the onion until soft and starting to brown at the edges. Cool slightly and mix in the chopped raw peppers. Add the garlic and cook for 1 min, then add the spices and stir. Cook for a couple of mins more until the spices become aromatic, then add half the lime juice and season. Transfer to a dish, leaving any juices behind, and keep warm.

  • STEP 2
    Tip the black beans into the same pan, then add the remaining lime juice and plenty of seasoning. Stir the beans around the pan to warm them through and help them absorb any flavours of the fajita mix, then stir through the coriander.

  • STEP 3
    Warm the tortillas in a microwave or in a low oven, then wrap them so they don’t dry out. Serve the tortillas with the fajita mix, beans, avocado and soured cream for everyone to help themselves.

Orange and Dark Chocolate Yoghurt Bowls

Make a delicious yoghurt bowl for breakfast, with a secret layer of creamy cholesterol-busting oats cooked in soya milk to make it more substantial! This yummy breakfast takes only 20 minutes to prepare.

Ingredients:

  • 2 Oranges, peeled and chopped

  • 2x 120g Pots of bio or soya yoghurt

  • 640ml Soya milk

  • 80g Porridge oats

  • 16g Pecans or walnuts, chopped

  • 10g Dark chocolate

  • Cinnamon

 Method:

  • STEP 1
    Tip the oats into a pan and pour in the soya milk. Stir over a medium heat for 5-8 mins until the oats are cooked and the mixture thickens slightly. Pour into two bowls and allow to cool for a few minutes to thicken further.

  • STEP 2
    Smooth the yoghurt over the top to completely cover the porridge, then top with the oranges, nuts, chocolate and cinnamon.
