5 Vegan-Friendly Recipes for You to Try This Veganuary

When it comes to thinking of nutritious, healthy meals to feed the family, it’s easy to get stuck in a rut of just having the same few dishes on rotation each week. While there’s absolutely nothing wrong with this if it works for you and your family, sometimes it’s nice to step outside your comfort zone and try something new, and what better time to make a change than Veganuary?

To give you a little inspiration and set you off in the right direction, we thought we’d share some of our favourite vegan recipes for you to try which are bound to be a hit with the entire family on these cold, Winter evenings:

1)     Vegan Moussaka

This scrummy moussaka is made up of a mushroom, lentil and tomato ragu, layered with potato and aubergine slices and topped with a bechamel style sauce, making it a real winner for vegans and meat-lovers alike!

Ingredients:

3 medium aubergines

3 large baking potatoes

4 tbsp olive oil

1 onion

300g chestnut mushrooms

3 garlic cloves

2 tsp dried oregano

3 tbsp tomato puree

150g brown lentils

2 x 400g tins chopped tomatoes

1 vegetable stock cube

90g hard dairy-free cheese

1½  tbsp cornflour

600 ml unsweetened dairy-free milk

90g dairy-free butter

90g plain flour

1 tsp ground nutmeg

2)     Vegan Katsu Curry

Katsu curry is an incredibly popular Japanese dish that’s always a huge hit with both adults and children, thanks to its rich, slightly sweet flavour and crunchy coating. This recipe swaps out the typical chicken protein for extra-firm tofu, but you can also use peeled sweet potato or aubergine if you’d prefer.

Ingredients:

280g block extra-firm tofu (we used The Tofoo Co Naked Tofu, from larger supermarkets)

1 tbsp soy sauce

50g panko breadcrumbs (check the label to ensure they’re vegan)

2 tbsp cornflour

Vegetable or sunflower oil to fry

Steamed rice, salad leaves and sushi ginger (from large supermarkets) to serve

Drizzle vegetable oil

½ onion, chopped

1 garlic clove, crushed

½ carrot, grated

½ small granny smith apple, peeled and grated

½ tbsp medium curry powder

1 tsp soy sauce

½ tbsp miso paste

3)     Lentil Shepherd’s Pie

If you have some picky eaters to cater for or perhaps just find the idea of obvious changes to meals too off-putting, this lentil shepherd’s pie has a similar sort of look and texture to a traditional, meat-based one, making it a great to option that is both healthy and tasty.

Ingredients:

1kg potatoes

½ tsp salt

80ml unsweetened, non-dairy milk

2 tbsp vegan butter

2 tsp olive oil

1 medium onion

4 cloves garlic

1 large carrot

2½ tsp dried herbs

190g cooked green or brown lentils

2 tbsp cornflour

3 tbsp tamari or soy sauce

240ml canned tomatoes or passata

240ml vegetable stock

4)     Easy Vegan Bean Burrito

Perfect for both lunch and dinner, this Mexican-inspired meal makes for a healthy, quick and nutritious addition to your menu. Better still, you can customise the fillings to suit everyone’s tastes without having to cook multiple versions of the same meal, making this a perfect option for families with children who prefer less spice than the adults!

Ingredients:

2 large tortillas

80g salsa

80g cooked kidney or black beans

½ spring onion

Salt, pepper & cayenne to taste

3 tbsp cooked brown rice

½ avocado

2 tsp corn kernels

2 lettuce leaves

½ fresh tomato

20g red bell pepper

5)     Chocolate Chip Cookies

If you’re looking for a sweet treat to enjoy after dinner, these vegan chocolate chip cookies are guaranteed to hit the spot and are really fun to bake with the kids!

Ingredients:

2 cups all-purpose flour

1 tsp baking soda

½ tsp salt

½ cup firmly packed dark brown sugar

½ cup granulated sugar

½ cup canola oil

¼ cup water

2 tsp pure vanilla extract

1 cup bittersweet vegan chocolate chips

1 cup semisweet vegan chocolate chips
