FINALLY! Each year, on the 29th of May, National biscuit day occurs.. This has to be one of the most favourable awareness days within the UK. If you’re into shortbread, you are in luck! 

Below you shall find the simplest yet decadent biscuit recipes. Great for getting the children involved and developing their independence.


Scrumptious shortbread 

Try making these easy, buttery shortbread biscuits for an afternoon activity with the kids. This recipe also works with chocolate chips or orange zest added to the dough. Creating these delicious biscuits only requires FIVE steps! 


You will need:

  • 125g/4oz unsalted butter, softened

  • 55g/2oz caster sugar, plus extra to finish

  • 180g/6oz plain flour


Method:

  1. Preheat your oven to 190°/170​​° Fan/5 GAS 

  2. Beat the sugar and butter together until smooth

  3. Add in the flour, stirring to make an even, smooth paste. Gently roll out the dough on a work surface, ensuring that you do so until the paste is 1 centimetre and ½ thick.

  4. Cut into the desired shape (circular or rectangular works best) and place onto a baking tray. Sprinkle with the caster sugar and place in the fridge to cool for 20 minutes.

  5. Bake the shortbread in the oven fo r15-20 minutes, or until a pale golden colour. Allow to cool before consuming.


Incredible Iced Biscuits 

Keep the kids entertained with this easy basic biscuit recipe. Let their imagination run wild with the icing, sprinkles and decorations!


You will need:

  • 100g/3½oz unsalted butter, softened at room temperature

  • 100g/3½oz caster sugar

  • 1 medium free-range egg, lightly beaten

  • 1 tsp vanilla extract

  • 275g/10 oz plain flour


Decorative ingredients:

  • 200g/7oz icing sugar

  • 3-4 tbsp water

  • 2-3 drops food colourings


Method:

  1. Preheat the oven to 190°/170° FAN/ 5° GAS and line with a greaseproof paper.

  2. Cream the butter and sugar together in a bowl. Beat in the egg and vanilla extract little by little, until smoothly combined. Stir in the flour and mix together until a dough is formed.

  3. Roll the dough out on a lightly floured work surface to a thickness of 1 centimetre/½ inch. Using biscuit cutters, cut biscuits out of the dough and carefully place onto the baking tray.

  4. Bake for 10 minutes or until golden brown. Allow to sit for 2 minutes to ensure the biscuit hardens - make sure you allow the biscuits to cool.

  5. Sift icing sugar into a large mixing bowl and stir in enough water to ensure smoothness. Add food colouring. 

  6. Carefully spread the icing onto the biscuits using a knife and set aside until the icing hardens.

Now it is time to sit back, relax, and enjoy your homemade biscuits!
